Honey Garlic Chicken

Ingredients
2 boneless, skinless chicken breasts, cut into bite-size pieces
1 tablespoon olive oil
3 tablespoons honey
1 small garlic clove, minced (use ½ clove for a milder garlic flavour)
¼ teaspoon salt
⅛ teaspoon black pepper
Method
Cut the chicken breasts into small, even bite-size pieces so they cook quickly and evenly.
Place a frying pan over medium heat and add the olive oil. Let it warm for about 1 minute.
Add the chicken pieces to the pan in a single layer. Season with salt and pepper.
Cook the chicken for about 6–8 minutes, stirring occasionally, until the pieces are lightly browned and almost cooked through.
Add the minced garlic and cook for about 30 seconds, stirring often so the garlic does not burn.
Pour the honey over the chicken and stir well to coat all the pieces.
Continue cooking for another 2–4 minutes, stirring often, until the honey thickens slightly, darkens to a golden colour, and coats the chicken.
Remove from the heat once the chicken is fully cooked and no longer pink in the middle. If using a thermometer, the chicken should reach 165°F / 74°C.
Serve warm with rice, noodles, vegetables, or salad.
Notes, tips & variations
Keep the heat at medium or slightly lower once the honey is added. Honey can burn quickly if the pan is too hot or if it cooks for too long.

Pan-cooked tilapia, crisp slaw, guacamole, and chipotle sauce make easy fish tacos.

Ingredients
1⅓ lb tilapia
12 flour tortillas
4 cups shredded red cabbage
4 cups spring mix
6 tbsp guacamole
4 tbsp chipotle sauce
4 tbsp seasoned rice vinegar
1 tbsp Mexican seasoning
Method
Pat tilapia dry with paper towel. Season both sides with Mexican seasoning, salt, and pepper.
Heat oil in a large frying pan on the stovetop over medium-high heat. Add tilapia and cook about 3 minutes per side, until it flakes easily with a fork. Break into large pieces.
In a large bowl, toss cabbage, spring mix, rice vinegar, oil, salt, and pepper.
Warm tortillas in a dry frying pan or microwave. Spread with chipotle sauce and guacamole. Add fish and slaw.

Chicken Burrito Rice Bowls

These burrito bowls layer seasoned chicken and corn over rice with pico, guacamole, and lime sour cream.

Ingredients
1 lb ground chicken
2 green onions
1½ cups basmati rice
4 tomatoes
2 limes
1½ cups corn kernels
½ cup sour cream
6 tbsp guacamole
4 tbsp Mexican seasoning
Method
In a medium pot, combine rice, 3 cups water, green onions, and a pinch of salt. Bring to a boil on the stovetop, cover, reduce heat to low, and cook about 15 minutes. Turn off heat and let stand about 5 minutes.
Heat oil in a large frying pan on the stovetop over medium-high heat. Add chicken, corn, Mexican seasoning, salt, and pepper. Cook about 7 minutes, stirring often, until chicken is cooked.
In a medium bowl, mix tomatoes, lime juice, and green onions for pico. In a small bowl, mix sour cream with lime juice.
Serve rice with chicken, pico, guacamole, and lime sour cream.

1 pound (450 g ) lean ground beef
1 jar (26 oz /740 g) pasta sauce
1 cup (125 g/4.4 oz) shredded mozzarella cheese
1 diced green bell pepper
1 cup (250 ml /8.5 oz) water
⅓ cup (80 ml/2.7 US fl oz) Italian salad dressing
10 uncooked lasagna noodles, broken into squares
1 clove garlic
Method
Preparing the noodles
Boil one clove of garlic in a saucepan of water.
Add noodles and cook until tender.
Preparing the Meat
Meanwhile, brown the ground beef in heavy skillet. Drain grease.
Add pasta sauce, water, dressing, and bell pepper.
Stir until well combined and bell pepper is tender.
Cover and let simmer over medium heat for 5 min.
Drain noodles and add to meat. Stir until well combined.
Cover and let stand under low heat for 5 min.
Add cheese and stir well, then turn off heat and let cool.

Creamy Mushroom Pasta

This creamy mushroom pasta recipe will satisfy your strongest Italian food cravings while providing epic flavor and a boost of nutrition. Best of all, it's ready in twenty minutes, making it a perfect weeknight dinner.

Ingredients
About 150 g / 5.3 oz dry pasta (suggestion: whole wheat linguine)
1 tablespoon unsalted butter
2 garlic cloves, minced
8 oz (230 g ) white button mushroom, stems removed
2 tablespoons dry white wine
¼ cup (60 ml / 2 oz ) heavy cream
¼ cup (60 ml / 2 oz ) low-sodium chicken broth
Salt to taste
¼ cup (30 g / 1.1 oz) grated parmesan cheese
ground black pepper
Chopped fresh parsley for garnishing
Method
In a large pot, cook pasta in salted boiling water for 8–9 min or according to the package directions until al dente. Drain.
Meanwhile, in a large skillet, melt butter over medium-high heat. Stir in minced garlic and let it cook for about 30 seconds until fragrant.
Place mushrooms in the skillet, cup side up. Cook for 3–5 min or until mushrooms start shrinking, moving the mushrooms around with a spatula occasionally.
Add white wine; continue cooking to let the wine and mushroom juice evaporate (about 3 min).
Pour heavy cream and chicken broth into the skillet, and add a generous pinch of salt. Switch to medium heat and cook until the cooking liquid is slightly thickened, flipping the mushrooms a couple times.
Sprinkle Parmesan cheese over the mushrooms and gently stir until the cheese is melted. Taste and add more salt if desired.
Toss the cooked pasta into the skillet. Combine well with the mushroom mixture, then transfer to a serving plate.
Sprinkle with freshly ground black pepper and garnish with chopped parsley. Add more grated Parmesan cheese if desired. Enjoy!
