Cheesy Beef Taquitos

Crunchy on the outside with a cheesy beef filling.

Cheesy Beef Taquitos

Ingredients

  • 1 lb ground beef
  • 12 flour tortillas
  • 2 tbsp enchilada seasoning
  • ¾ cup guacamole
  • 2 limes
  • 4 tomatoes
  • 4 tbsp tomato paste
  • ⅓ cup sour cream
  • 2 shallots
  • 1 cup shredded Monterey Jack cheese

Method

  1. Preheat oven to 400°F. Heat oil in a large frying pan on the stovetop over medium-high heat. Add beef, shallots, enchilada seasoning, tomato paste, salt, and pepper. Cook about 5 minutes, breaking up beef, until browned.
  2. Place tortillas on a clean cutting board. Add beef and Monterey Jack to each tortilla. Roll tightly.
  3. Place taquitos seam-side down on a baking sheet. Brush or spray with oil. Bake about 10 minutes, until crisp.
  4. In a medium bowl, mix tomatoes and lime juice. Serve taquitos with guacamole, sour cream, salsa, and lime.
