Chicken Burrito Rice Bowls

Chicken Burrito Rice Bowls

Ingredients

  • 1 lb ground chicken
  • 2 green onions
  • 1½ cups basmati rice
  • 4 tomatoes
  • 2 limes
  • 1½ cups corn kernels
  • ½ cup sour cream
  • 6 tbsp guacamole
  • 4 tbsp Mexican seasoning

Method

  1. In a medium pot, combine rice, 3 cups water, green onions, and a pinch of salt. Bring to a boil on the stovetop, cover, reduce heat to low, and cook about 15 minutes. Turn off heat and let stand about 5 minutes.
  2. Heat oil in a large frying pan on the stovetop over medium-high heat. Add chicken, corn, Mexican seasoning, salt, and pepper. Cook about 7 minutes, stirring often, until chicken is cooked.
  3. In a medium bowl, mix tomatoes, lime juice, and green onions for pico. In a small bowl, mix sour cream with lime juice.
  4. Serve rice with chicken, pico, guacamole, and lime sour cream.
