Veggie Stir Fry

Cooked with a glossy ginger-garlic sauce in under 30 minutes.

Ingredients

  • 3 tbsp vegetable oil, divided
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 2 carrots, julienned
  • 1 cup sliced mushrooms
  • 3 cloves garlic, minced
  • 1 tbsp grated ginger
  • 1/3 cup soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch
  • 1/2 cup vegetable broth
  • 1 tsp sesame oil
  • 2 green onions, sliced
  • 1 tbsp sesame seeds
  • Rice or noodles for serving

Method

  1. Cook the rice or noodles according to package directions and keep warm.
  2. Whisk soy sauce, rice vinegar, brown sugar, cornstarch, broth, and sesame oil.
  3. Heat 2 tbsp oil in a wok over high heat. Add broccoli, carrots, and peppers; stir-fry 4 min.
  4. Add snap peas and mushrooms, stir-fry 2 min.
  5. Push to one side, add remaining oil, garlic, and ginger; stir 30sec.
  6. Pour in sauce, toss everything together, and cook 1–2 min until glossy and thickened.
  7. Top with green onions and sesame seeds. Serve over rice or noodles.
